Lamington é um bolo tradicional na Austrália e leva o nome de um governador australiano do século 19. Simples pão de ló, recheado com geléia, tradicionalmente de morango, e coberto com chocolate e coco ralado.
Hoje é Dia da Austrália, 26 de janeiro, e, pra comemorar, fiz a minha versão de Lamington:
LAMINGTON CUPCAKES
180g de manteiga sem sal
1 1/4 copo de açúcar refinado
3 ovos
1/2 colher de chá de essência de baunilha
1 1/2 copo de farinha de trigo
1/2 colher de chá de fermento químico
1/2 copo de leite
Bater na batedeira a manteiga e o açúcar até ficar cremoso. Adicionar os ovos e a baunilha e bater mais um pouco. Adicionar a farinha e o fermento em pó e o leite, aos poucos.
Colocar em forminhas de cupcake e assar por uns 20-25 minutos em forno médio (180°C). Deixar esfriar.
Cobertura
1 colher de sopa de cacau em pó
1 colher de sopa de manteiga sem sal
1/2 copo de água fervente
3 copos de açúcar de confeiteiro
geléia da sua preferência
coco ralado
Derreter a manteiga na água fervente e adicionar o cacau em pó. Mexer com um garfo até ficar homogêneo. Adicionar o açúcar de confeiteiro aos poucos, até a consistência desejada - eu gosto bem firme.
Quando os bolinhos estiverem frios, cortar ou raspar com uma colher o topo e fazer um buraco raso. Preencher o buraco com geléia e cobrir tudo com a cobertura de chocolate - eu usei o saco de confeitar, mas pode-se usar simplesmente uma colher. Salpicar o coco ralado por cima de tudo.
Eu usei geléia de tangerina que era o que eu tinha na despensa - presente do meu vizinho!

Lamington is a traditional cake in Australia and takes the name of an Australian Governor from the 19th Century. It is a simple sponge cake, filled with jam, traditionally strawberry jam, and topped with chocolate and shredded coconut.
Today is Australia Day, January 26, and to celebrate, I made my version of Lamington:
LAMINGTON CUPCAKES
180g unsalted butter
1 1/4 cup caster sugar
3 eggs
1/2 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup milk
Mix the butter and sugar until creamy. Add eggs and vanilla and beat a little more. Add the flour and baking powder and milk gradually.Put into cupcake pans and bake for 20-25 minutes in a moderate oven (180°C). Allow it to cool.
Icing
1 tablespoon cocoa powder
1 tablespoon unsalted butter
1/2 cup boiling water
3 cups icing sugar
jam of your choice
shredded coconut
Melt butter in boiling water and add the cocoa powder. Whisk until smooth. Add the icing sugar gradually until desired consistency - I like it thick.
When the cupcakes are cool, cut or scrape the tops with a spoon and make a shallow well. Fill the well with jam and cover it with chocolate icing - I used a piping bag, but you can just use a spoon. Sprinkle shredded coconut on top.
I used tangerine jam as it was what I had in the pantry - a gift from my neighbour!
