Minha versão de pão de mel / My version of the Brazilian gingerbread

Quem não gosta de pão de mel? Bolo com especiarias, recheado com doce-de-leite e coberto com chocolate! Não tem como não gostar!! Pois é, os australianos apresentados à essa delícia, também se renderam aos seus encantos. Meu marido foi o primeiro.

Hoje, 1 de setembro, é aniversário dele (e primeiro dia oficial da primavera australiana!), mas, comemoramos ontem com um bolo que arrancou suspiros e gemidos de toda família! hehe
Quando tirei o 'bolo' da caixa e coloquei em cima da mesa, todos arregalaram os olhos me perguntando 'o que era aquilo'! E, chegando mais perto, dava pra sentir o cheiro de chocolate, deixando óbvio que era o bolo de aniverário do Malcolm. Daí, a pergunta era 'como você fez isso?'. 'Mágica!' hehehe

É simplesmente pão de mel, recheado com doce-de-leite e coberto com chocolate amargo.

'E as velas, também são de comer?'... 'Não, só os copinhos são de comer, as velas são só pra soprar e descartar...' hehehe

Foi bem divertido fazer o bolo e melhor ainda comê-lo! Mas, nada como ver o povo curioso e satisfeito! Não sobraram nem os copinhos... e vi gente lambendo as velinhas também... hahaha! :-)

Who doesn't like gingerbread (Brazilian version)? Cake with spices, stuffed with milk caramel and coated with chocolate! Impossible not to like it!! Australians introduced to this delight, also surrendered to its charms. My husband was the first one.

Today, September 1, is his birthday (and official first day of the Australian spring!), but we celebrated yesterday with a cake that took the whole family's breath away! hehe

When I took the 'cake' out of the box and put it on the table, all looked at it with wide eyes wondering 'what that was'! As they got closer, they could smell the chocolate, making it obvious that it was Malcolm's birthday cake. Then, the question was 'how did you do that?'. 'Magic!' hehehe

It is simply gingerbread, stuffed with milk caramel and coated with dark chocolate.

'What about the candles, are they also edible?' ... 'Nope, just the cups are, the candles are just for blowing and discarding ...' hehehe

It was fun making the cake and eating it even better! But nothing like watching everybody, puzzled and happy! Not even the cups were left... and I saw people licking the candles too ... hahaha! :-)

O estrago que a maldita sacolinha plástica faz! / The damage the damn plastic bag does!

Acabei de ler uma matéria no site do G1 (globo.com) que me deixou contente e, ao mesmo tempo, chateada. Fiquei contente porque relata o resgate de um filhote de golfinho por pescadores no litoral do estado de São Paulo e chateada porque o resgate foi necessário por causa de uma sacolinha plástica enroscada no bico do animal.

É estimado que uma em cada três tartarugas marinhas tem resíduos de plástico no estômago (registro de mais de 370 autópsias). Uma sacolinha plástica flutuando na água se parece com água-viva, principal alimento de tartarugas marinhas. Acredita-se que ao menos 267 diferente espécies de animais marinhos (aves, peixes, baleias, focas, tartarugas etc) sofrem com a poluição causada pelas sacolas plásticas que acabam nos oceanos. 

O plástico leva mais de mil anos pra se decompor e, mesmo depois da morte do animal que ingeriu o material, seus poluentes voltam ao meio ambiente. E, ao mesmo tempo, a carga tóxica no corpo do animal é também transferida ao meio ambiente ou ao seu predador e pode até mesmo voltar ao homem através do consumo de peixes e frutos do mar.

Na próxima vez que for fazer compras, não esqueça de levar sacolas reutilizáveis e recicle todo lixo plástico que você gerar. Aposto que você se sentirá orgulhoso por dar o bom exemplo aos seus filhos! :-)

I've just read an article on the website globo.com that made me happy and upset at the same time. I was glad because it reported the rescue of a baby dolphin by fishermen on the coast of São Paulo state, in Brazil, and upset because the rescue was necessary due to a plastic bag tangled around the animal's nose.

It is estimated that one in three marine turtles has plastic waste in its stomach (record over 370 autopsies) . A plastic bag floating in the water looks like jellyfish and turtles feed on them. It is believed that at least 267 different species of marine animals (birds, fish, whales, seals, turtles, etc.) suffer from the pollution caused by plastic bags that end up in the oceans.

Plastic takes more than a thousand years to decompose, and even after the death of the animal, its pollutants return to the environment. At the same time, the toxic load on the body of the animal is also transferred to the environment or to its predator and can even return to humans through the consumption of fish and seafood.

Suspirinhos / Meringues

Graças às sobras do tiramisu que eu decidi fazer hoje por causa das sobras de mascarpone dos cupcakes de limão siciliano que fiz no domingo, fiz suspiro pela primeira vez!! Pelo menos, foi a primeira vez que funcionou!! Então, vou contar essa como a primeira vez! ;-)

Explicando melhor, todos já sabem que eu uso sobras e nunca jogo comida, ou ingredientes, fora. No domingo passado, fiz bolinhos de limão, com cobertura de mascarpone (não deu tempo de tirar foto! Comemos tudo! rsrs) e usei só um pouco do queijo. O que sobrou do mascarpone, eu usei hoje, fazendo um tiramisu. Mas, daí, sobrou clara em neve e resolvi assar em forma de suspiro!

Coloquei um monte mais de açúcar, moldei com o saco de confeitar e coloquei no forno. Uma hora e meia depois, tinha uma bandeja cheia de suspirinhos! :-)

Bem, só queria dividir a minha alegria de ter, finalmente, aprendido como fazer suspiro direito! :-D

Thanks to leftovers from a tiramisu I decided to do today due to mascarpone leftover from lemon cupcakes I made on Sunday, I made meringues for the first time! At least, it was the first time it worked out! So, I'll count this as the first time! ;-)

Explaining better, everyone knows that I use leftovers and never throw food or ingredients out. So last Sunday, I made lemon cupcakes, frosted with mascarpone (no time to take photo! We ate everything! hehe) and I only used a little of the cheese. What was left of the mascarpone, I used today, making a tiramisu. But then, I ended with beaten egg whites left and decided to bake them as meringues!

I put a lot more sugar, squizzed it through a piping bag and popped it in the oven. An hour and a half later, I had a tray full of little fluffy sweets! :-)

Well, just wanted to share my joy of having finally learned how to make meringue right! :-D

Não jogue comida fora! / Do not throw food away!

Todo mundo sabe que eu detesto desperdício de comida. Já escrevi bastante sobre isso aqui no blog! Mas, depois de saber do discurso do secretário-geral da ONU, o sul-coreano Ban Ki-moon, no Dia Mundial do Meio Ambiente (5 de junho), não resisti em falar sobre o assunto uma vez mais...

O Sr. Ban mencionou que um terço de toda comida produzida no mundo é jogada fora, em lixões. E isso independe do país ou região geográfica. O desperdício é praticamente igual em qualquer lugar, de acordo com diversas pesquisas. Um terço de todos os alimentos produzidos mundialmente soma em torno de 1,3 bilhões de toneladas em um único ano! Eu não consigo imaginar o volume de 1,3 bilhões de toneladas de comida! Mas, eu sei que é cinco vezes mais comida do que é produzida no continente africano (abaixo do deserto do Sahara)!! É muita comida!! Jogada no lixo!!

Em tempos que mais de 870 milhões de pessoas famintas no mundo (4.5 vezes a população do Brasil!!), o Sr. Ban está certíssimo quando diz que o desperdício chega a ser uma ofensa aos que passam fome.

Bom, não vou ficar aqui enumerando essas estatísticas tristes...

Em fevereiro, assisti a um debate sobre o desperdício de comida e, ao final, os cinco participantes deram dicas bastante práticas de como evitar o desperdício em casa. Aqui vão algumas delas:

- compre somente o que você tem certeza de que vai consumir
Antes de ir ao supermercado, cheque o que tem na geladeira e na despensa, faça uma lista do que falta e planeje as refeições dos próximos dias.

- atenção à data de validade
Organize a despensa de maneira que o pacote mais velho fique na frente do mais novo pra ter certeza de que você vai usá-lo antes de estragar.

- use as sobras
Comida que sobrou na panela não deve ser jogada fora. Você pode modificar e comer no dia seguinte. Por exemplo, se sobrou arroz na janta, você pode adicionar um ovo, farinha de trigo, salsinha e fazer bolinhos de arroz fritos pro almoço do dia seguinte.

- congele comida pronta
Se sobrou demais, congele. Você pode congelar em saquinhos ou potinhos plásticos. Você pode até aproveitar um dia de inspiração e cozinhar de monte e guardar em porções no freezer. Fazendo isso, não vai só te ajudar a diminuir o desperdíco de comida, mas também vai ajudar na economia de gás de cozinha, de tempo e até de eletricidade já que o freezer funciona melhor quando está cheio!

- não despreze frutas e legumes "feios"
Frutas e legumes que não são perfeitamente redondos ou brilhantes são, geralmente, desprezados e deixados pra apodrecer nas bancas. Só porque a maçã é um pouco menor ou menos vermelha do que as outras, não significa que seja menos nutritiva. E você pode até conseguir um preço melhor!

- cultive seus próprios temperos
É muito comum a gente acabar jogando fora metade do maço de salsinha que estragou na geladeira antes de conseguirmos usá-lo todo. Você pode compar um vasinho de salsinha no supermercado e começar a sua pequena horta de temperos. Dá pra manter os vasinhos na cozinha ou na lavanderia e colher somente a quantidade que você precisa naquele momento.

Ah, existem tantas outras práticas pra evitarmos o desperdício, mas por hoje, essas acima são o suficiente!

Everyone knows I hate wasting food. I have written a lot about it here on the blog! But after learning of the speech of the Secretary General of the UN, the South Korean Ban Ki-moon, on the World Environment Day (June 5), I couldn't resist talking about it again ...

Mr. Ban noted that one third of all food produced in the world is thrown away in landfills. And this is independent of the country or geographic region. The waste is practically equal anywhere, according to several research. One third of all food produced worldwide sum around 1.3 billion tons in a single year! I can not imagine the volume of 1.3 billion tons of food! But I know it's five times more food than it is produced in the sub-Sahara Africa! It's a lot of food! Thrown in the trash!


In times when there are more than 870 million undernourished people in the world (4.5 times the population of Brazil!), Mr. Ban is absolutely right when he says that the waste is an affront to the hungry ones.


Well, I won't stand here enumerating these sad statistics ...


In February, I attended a debate on food waste and at the end, the five participants gave very practical tips on how to avoid the wastage at home. Here are some of them:


- Buy only what you are sure you will consume 

Before you go to the supermarket, check what's in the fridge and pantry, make a list of what is missing and plan the next days meals.

- Attention to the expiry date

Organize the pantry so that the oldest package stands in front of the others to be sure that you will use it before it goes bad.

- Use leftovers

Food left in the pot should not be thrown away. You can modify it and eat it the next day. For example, if there's rice left at dinner, you can add an egg, flour, parsley and make fried rice balls for lunch the next day.

- Freeze cooked food

If there's a lot leftover, freeze it. You can freeze it in plastic bags or containers. If you feel inspired that day, cook in bulk and store in the freezer, in portions. Doing so, will not only help you to reduce the waste of food, but will also help in saving cooking gas, time and even electricity because the freezer works best when it is full!

- Do not despise "bad looking" fruits and vegetables 

Fruits and vegetables that are not perfectly round or shiny are usually neglected and left to rot on the stands. Just because the apple is a little smaller or less red than the others, it doesn't make it less nutritious. And you can even get a better price for those!

- Grow your own herbs and spices 

Too often we end up throwing out half bunch parsley that spoiled in the fridge before we could use it all. You can buy a little pot of parsley at the grocery store and start your small garden of herbs. You can keep the pots in the kitchen or laundry, and pick only the amount you need for a meal.

Oh, there are so many other practices to avoid wastage, but for now, that's enough!

Lista de compras / Shopping list

Como já disse em outros posts, não admito desperdício de comida. Todas as formas de desperdício são absurdas, mas, o desperdício de comida chega a ser uma crueldade, no meu ponto de vista, e por motivos óbvios que nem vou mencionar de novo.

Ao longo dos anos, venho notando mais e mais pessoas preocupadas e até envergonhadas com o desperdício de comida. O que é um bom sinal já que o primeiro passo para se melhorar algo é identificar o problema e o segundo, admití-lo!

Ano passado, tive a oportunidade de passar dias maravilhosos com a minha querida tia Clarice. A tia Clarice costura bem pra caramba e eu pedi pra ela me ensinar os truques básicos, já que todo meu conhecimento sobre costura se resumia a colocar linha na agulha!

Ela também é craque em reciclagem. A primeira vez que notei como as coisas que, normalmente, chamamos de 'lixo' podem ser reutilizadas foi quando vi um cachepô que ela fez com uma garrafa plástica. E isso foi há uns 30 anos! Quando a gente nem sabia que a palavra 'reciclagem' existia!! A casa dela é cheia dessas "reciclagens", ela reaproveita tudo o que pode. Mas, tem um setor em que ela não consegue evitar o desperdício: a cozinha. Fizemos um trato de que eu ajudaria sugerindo mudanças pra ela melhorar o aproveitamento de alimentos em troca das aulas de costura.

Então, uma vez por semana, a gente passava o dia costurando e conversando sobre várias coisas e também sobre lista de supermercado, nutrientes, legumes, calorias, pudim de pão etc. Imediatamente, ela implantou a receita do pudim de pão (reaproveitamento de pão amanhecido) diet (alternativa de sobremesa de baixa caloria) ao cardápio da família. Sugestão minha. Fiquei muito contente ao ver que ela estava super animada em melhorar a qualidade nutricional das refeições e otimizar o uso dos alimentos.  Mas, fiquei triste quando tive que me mudar pra Austrália (a tia Clarice mora no Brasil) antes de terminarmos as conversas sobre a lista de compras! Coisas simples, mas, que fazem uma grande diferença no fim de cada mês, se você contabilizar o quanto jogou fora porque não conseguiu usar antes de estragar.

Por essa razão, resolvi, finalmente!, listar aqui no blog algumas dicas que funcionam comigo para facilitar o gerenciamento da cozinha. Ainda estou trabalhando nessa lista e a estarei postando nos próximos dias. Esse post aqui é só uma introdução ao assunto e uma desculpa pra apresentar a tia Clarice! :-)

As I said in other posts, I don't like food waste. All forms of waste are an absurd, but food waste amounts to cruelty, in my view, and for obvious reasons that I will not mention here again.

Over the years, I have noticed more and more people concerned, even embarrassed by the food waste. What is a good sign as the first step to improve something is to identify the problem and the second, admit it!


Last year I had the opportunity to spend wonderful days with my dear Aunt Clarice. Aunt Clarice is a great seamstress and I asked her to teach me the basic tricks, since all my knowledge of sewing came down to threading a  needle!


She is also great in recycling. The first time I noticed how the things we normally call 'trash' can be reused was when I saw a plant pot she made with a plastic bottle. And that was around 30 years ago! When we didn't even know the word 'recycling' existed! Her house is full of "recycled stuff," she recycles everything she can. But there's a sector in which she can't avoid waste: in the kitchen. We made a deal that I would help her by suggesting changes to improve the use of food in exchange for the sewing classes.


Then, once a week, we spent the day sewing and talking about various things and also about grocery list, nutrients, veggies, calories, bread pudding etc.. Immediately, she implemented my recipe of bread pudding (to use stale bread) diet version (alternative of low-calorie dessert) to the menu of the family. I was very glad to see that she was excited about improving the nutritional quality of their meals and optimize the use of food. But I was sad when I had to move to Australia (Aunt Clarice lives in Brazil) before we finish the talks on the shopping list! Simple things, but they make a big difference at the end of each month, if you take to account how much you threw away because couldn't use the ingredients or final dishes before they went bad.


For this reason, I decided to list here on the blog some tips that work for me to facilitate the management of the kitchen. I'm still working on that list and will be posting it in the next days. This post is only an introduction to the subject and to my Aunt Clarice! :-)

Dia Mundial dos Direitos do Consumidor.

Alguém sabia da existência do Dia Mundial dos Direitos do Consumidor (WCRD, sigla em inglês)? É o dia 15 de março. Fiquei curiosa quando vi algumas matérias nos sites de notícias falando sobre o Dia do Consumidor e resolvi pesquisar um pouco...

A Consumers International, organização composta por grupos de consumidores em mais de 115 países, criou o Dia Mundial dos Direitos do Consumidor em 1983 com o intuito de mobilizar os cidadãos de forma a assegurar que os direitos do consumidor sejam respeitados e protegidos.

Um dos artigos interessantes que li foi o do colunista Gilberto Dimenstein, da Folha.com (http://www1.folha.uol.com.br/colunas/gilbertodimenstein/1062172-mais-inteligencia-menos-consumo.shtml). Ele fala sobre o Consumo Colaborativo, um conceito ainda novo no Brasil, mas, já com alguns adeptos como, por exemplo, o http://www.caronetas.com.br/ que é um site que registra empresas e seus funcionários pra que estes se organizem em grupos de carona para dividir o carro para ir e voltar do trabalho, reduzindo o número de veículos que se dirigem ao mesmo local diariamente.
Nos dias de hoje, com a facilidade de conseguir informação pela internet, fica muito fácil encontrar uma alternativa barata de adquirir o que se precisa. Às vezes, nem é o caso de se comprar, mas, simplesmente tomar emprestado, alugar ou compartilhar. Há sites como o http://www.neighborgoods.com/ que coloca em contato pessoas que têm algo pra oferecer e as pessoas que buscam o mesmo, nas imediações.

Eu já estou nessa onda há algum tempo. Meus amigos já estão familiarizados com as minhas ofertas e solicitações de ajuda online. Quando tinha algo que não usava mais, costumava oferecer a um preço bem atrativo aos meus amigos, via e-mail, e sempre consegui vender. Hoje em dia, faço doações a amigos ou a instituições de caridade. Também sempre me beneficiei das informações que obtive questionando os mesmos amigos sobre onde encontrar determinado produto ou serviço, como indicação de um bom sapateiro ou onde encontrar produto pra limpar prataria.

Aprendi a comprar em lojas de "usados", também conhecidos como "de segunda-mão", e ando comprando roupas e itens pra casa a preços ridículos (máquina de costura Singer por R$ 95,00 - nova: R$ 400,00). Da mesma forma, se pode comprar no site http://www.ebay.com/. Acabei de ler um livro que, novo, custaria R$ 85,00. Eu paguei R$ 22,00, no eBay, por um usado em perfeitas condições.
Essas iniciativas todas ajudam a economizar grana e tempo, além de ajudar outras pessoas e aliviar o meio ambiente, reduzindo a necessidade de produção de novos produtos que, um dia, vão virar lixo.

Se você é como eu e concorda que tão importante quanto comemorar o Dia Mundial dos Direitos do Consumidor também o é observar os Deveres do Consumidor, coloque em prática os famosos três Rs: Reduzir, Reciclar e Re-utilizar. Uma excelente dica é buscar na sua comunidade, grupo de amigos, lista de e-mail, escritório, classe de aula os produtos ou serviços de que precisa e oferecer o que você tem sobrando. Esse é o Consumo Colaborativo. :-)

Did anyone know of the existence of the World Consumers Rights Day? It is on the 15th of March. I was curious when I saw some stories on news websites talking about the Consumer's Day and decided to search a little ...

The Consumers International, an organization composed of groups of consumers in over 115 countries, created the World Consumers Rights Day in 1983 in order to mobilize citizens to ensure that consumers rights are respected and protected.

One of the interesting articles I read was that by the columnist Gilberto Dimenstein, from the http://www.folha.com/. He talks about the Collaborative Consumption, a concept still new in Brazil, but, with some supporters, for example, the http://www.caronetas.com.br/ which is a website that registers companies and their employees so that they organize themselves into groups to share the car ride to and from work, reducing the number of vehicles that go to the same place every day.

Nowadays, with the ease of getting information through the internet, it is very easy to find a cheap alternative to buy what you need. Sometimes it is not even a case of buying, but simply borrowing, renting or sharing. There are websites like http://www.neighborgoods.com/ that puts in touch people who have something to offer and people who seek the same thing in the vicinity.

I'm already on that wave for quite some time. My friends are already familiar with my offers and requests for help online. When I had something that no longer used, I used to offer it for a very attractive price to my friends via e-mail, and always managed to sell it. Today, I make donations to friends or charity organizations. Also I always benefited from the information that I got from asking the same group of friends about where to find a particular product or service, such as recommendation of a good shoefixer and where to find products to clean silverware.

I learned to shop at second-hand stores and I've been buying clothes and home items at ridiculous prices (Singer sewing machine for $ 50.00 - new: $ 200.00 .) Likewise, you can buy on the website http://www.ebay.com/ I've just read a book that, new, costs $ 45.00. I paid $ 12.00 on eBay for a used one in perfect condition.

These initiatives will help you save money and time, and help others and relieve the environment, reducing the need for producing new articles that will one day become trash.

If you're like me and agree that as important as celebrating the World Consumers Rights Day it is also to observe the Consumer's Duties, then put into practice the famous three Rs: Reduce, Recycle and Reuse. An excellent tip is to search in your community, group of friends, e-mail contacts list, office, classroom, products or services you need and offer what you have. This is the Collaborative Consumption. :-)

Pudim de pão / Bread pudding

Sempre gostei muito de pudim de pão. Cresci comendo pudim de pão. Um belo dia, resolvi que queria independência sobre o meu pudim de pão e pedi a receita pra minha mãe. Como ela estava ocupada com outros afazeres da casa naquela manhã, eu, no auge da impaciência de adolescente, fui pra cozinha e criei isto:

6 pãezinhos (francês de 50g) picados
5 copos de leite
10 colheres (sopa) de açúcar
3 ovos inteiros
2 colheres (sopa) de margarina
canela em pó a gosto

Misturei todos os ingredientes e assei em fôrma caramelada por, mais ou menos, 45 minutos. Não coloquei em banho-maria. Ficou ótimo. Todos gostaram.

Desde então, essa receita conquistou muitos fãs, alguns até internacionais! Tem gente que gosta tanto que me pede a receita e até me convida pra fazer o dito cujo em sua própria casa.

Também gosto de mencionar que é uma excelente maneira de aproveitar pães velhos. Esse pudim aceita qualquer tipo de pão: francês, de fôrma, italiano, bisnaga, qualquer um.

Ao longo dos anos, fui adicionando ingredientes "coadjuvantes" no preparo e na maneira de servir como uma forma de quebrar a monotonia. A receita acima já foi recheada com goiabada e queijo, bananas fatiadas e já foi servida com sorvete de creme. Pode ser servido quente, com o chá da tarde, ou frio, como sobremesa.

Também fica muito boa a versão de liquidificador e com leite condensado: substitui-se o açúcar por uma lata de leite condensado e bate tudo no liquidificador. A massa fica mais lisa e, se for assada em banho-maria, fica com furinhos e sabor iguais ao tradicional pudim de leite.

Nos últimos tempos, comecei a procurar uma alternativa pros gordinhos e diabéticos poderem apreciar o pudim sem problema. Até mesmo pra eu não me sentir culpada por "envenenar" alguém. Então, modifiquei a receita pra essa aqui:

6 pãezinhos (francês de 50g) picados
5 copos de leite desnatado
2 colheres (sopa) de açúcar light ou 10 colheres (sopa) de Tal e Qual
3 ovos inteiros
essência de baunilha a gosto
canela em pó a gosto

O processo de preparo é o mesmo e a calda de caramelo pode ser adicionada ou não. O pudim, com calda ou sem calda, é assado e desenformado da mesma maneira. Eu prefiro desenformar ainda quente, quando a calda ainda está bem líquida. Uma outra dica é a de untar a fôrma do pudim sem calda de caramelo, que fica mais fácil pra desenformar.

Fiquei alegremente surpresa quando percebi sucesso igual da versão mais light. Todo mundo gosta muito, pede a receita e não reclama do sabor de adoçante. Muitos nem sequer percebem que o pudim leva adoçante.

Notem que o pudim light ainda é feito de PÃO que, por sua vez, é feito de farinha de trigo, de consumo restrito a muitos diabéticos. Então, há que se ter critério pra consumir o delicioso pudim, caso você seja diabético, ok!

No mais, espero que todos aproveitem as receitas e comam bastante pudim de pão. E me contem das suas próprias adaptações e criações em volta de uma das minhas sobremesas favoritas! :-D

Bread pudding

I've always loved bread pudding. I grew up eating bread pudding. One day I decided I wanted to be independent and make my own bread pudding and asked my mom for the recipe. As she was busy with other chores of the house that morning, at the height of the impatience of a teenager, I went to the kitchen and created this:

6 rolls, chopped
5 cups of milk
10 tbsp of sugar
3 whole eggs
2 tbsp of margarine
cinnamon to taste

I mixed all ingredients and baked in a caramelized pan for about 45 minutes. I didn´t put in a water bath. It turned great. Everyone liked it.

Since then, this recipe has made many fans, some international ones too! Some people like it so much that ask me for the recipe and even for me to go and prepare it in their own home.

I also like to mention that it is an excellent way to use stale bread. This pudding accepts any type of bread: white, Italian, French, naan, wholemeal, any bread.

Over the years, I tried adding “supporting” ingredients to the recipe and into the serving as a way to break the monotony. The recipe above has been filled with guava jam and white cheese (very popular combination in Brazil), sliced
​​
bananas and was served with vanilla ice cream. It can be served warm, along with your afternoon tea, or cold as a dessert.

There's also another good version of it: replace the sugar by a can of condensed milk and mix everything in the blender. The dough gets very smooth and, if baked in a water bath, develops holes and flavor just like the traditional milk pudding.

Recently, I started to think of an alternative for the chubbies ones and for the diabetics, so they can enjoy the pudding without problem. Also, I won´t feel guilty for "poisoning" anyone. So, I modified the recipe to this one:

6 rolls, chopped
5 cups of skim milk
2 tbsp of sugar or 10 tbsp of cooking sweetener
3 whole eggs
vanilla extract to taste
cinnamon to taste

The preparation is the same and the caramel syrup can be added or not. The pudding with the syrup or without it, is baked and unmolded the same way. I prefer to unmold when it is still hot and the syrup is still liquid. Another tip is to grease the pan of the pudding without the caramel syrup, which makes it easier to unmold it.

I was happily surprised when I realized the same success with the light version. Everyone likes it a lot and I heard no complaints about the sweetener after taste. Many don´t even realize that the pudding contains sweetener.

Note that the light version of the pudding is still made of BREAD, which is made of wheat flour, restricted to many diabetics. So, there should be discretion to eat this delicious pudding if you are diabetic, ok!

Sobras / Leftovers

Já mencionei outras vezes que detesto desperdício de comida e que tento aproveitar tudo que é possível na cozinha.

Sem brincadeira, juro que o cestinho de lixo da minha cozinha é minúsculo e, geralmente, só tem cascas e sementes não comestíveis (ou que eu ainda não sei como aproveitá-las) e excesso de gordura que corto fora das carnes.

Tento usar todas as partes dos legumes e hortaliças, assim como das frutas também. E, principalmente, re-utilizo as sobras de comida em outras receitas:

Além do pudim de pão, pra aproveitar os pãezinhos adormecidos, também faço croutons pra jogar por cima de sopas, frito com manteiga pra fazer sanduíches, faço torradinhas ou misturo com carne moída pra fazer almôndegas.
Os restinhos de arroz cozido, que não dão nem pra uma refeição, uso pra fazer bolinho frito. Banana passada, já bem machucada, faço geléia ou doce de banana. Feijão cozido, dá pra fazer farofa ou tutu, misturado à farinha de milho em flocos. Leite azedo, vira ambrosia.

Outro dia, esqueci o sagu de vinho no fogo e as bolinhas desmancharam completamente. Virou uma massa gomosa, mas de gosto delicioso... hehehe... resolvi que aquilo dava um bom recheio de torta. Bati biscoito maizena no liquidificador, misturei com margarina, moldei no fundo de um refratário, enchi com o recheio de vinho e cobri com o restante da farofa de biscoito. Depois de umas horas de geladeira, ficou ótimo. E não tive que jogar fora o pseudo-sagu! :-)

Leftovers

I´ve already mentioned that I hate wasting food and I try to make use of all that is possible in the kitchen.

No kidding, I swear that the trash
bin in my kitchen is tiny and usually only has skin and seeds (non-edible or that I still don´t know how to use it) and fat excess I cut off the meat.

I try to use all parts of vegetables and greens, fruits as well. More importantly, I re-use the leftovers in other recipes:

In addition to bread pudding, to use old rolls, I also
make croutons to sprinkle on top of soups, fry with butter to make sandwiches, I make toast or mix with ground beef as meatballs.
The last bit of cooked rice, not
even enough for one meal, I use it to make fried patties. Bananas, old and bruised, I cook with sugar to a jam. Cooked beans can turn into tutu (Brazilian seasoned paste mix), mixed with corn flour. Sour milk, becomes ambrosia.

The other day, I forgot the red wine sago cooking and the pellets have dissolved completely.
It turned a gummy mass, but very tasty ... hehehe ... I decided that it´d give a good pie filling. I crashed cookies, mixed with butter and molded it in a dish, filled with the red wine filling and covered with the remaining cookie crumbs. After
few hours in the fridge, it was great. And I didn´t have to throw out the pseudo-sago! :-)

Chronicles of Signature Park - the moving, the creativity and the pantry!

One thing I can't stand is waste of food! I see food not only as the object of one of the biggest pleasures in life, but, first of all, it is the fuel that keeps us going. It is a sacred gift that millions can't afford and the humanitarian programs' statistics show its privation as prior reason of death in poor countries. So, I think every one should feel grateful for having fridge and pantry full and avoid wastage.

As I have shared with you before, I learned, at early age, from my mum, that it is possible to reuse left overs and "recycle" ingredients, - remember of the 'bread pudding dilemma'? - and I duly put it in practice!

I'm moving out of the apartment I lived for one year and will stay in a hotel for a couple of weeks, so, I can't take the remainings in the fridge with me. I have been using all tricks I know to combine ingredients and 'customize' recipes to use them up. Also thanks to recipe books, notes and the glorious internet...

On this mission, I have come up with unique and unexpected sandwiches, pizzas, wraps, salads, pies, spreads, sauces, soups, cakes, cookies etc... most of them, edible! :-)

My famous orange cake was transformed in tangerine cake and even in grapefruit cake! The second one didn't turn into my best outputs, but the oat cookies transformed in wheat cookies were precious!

I even had the chance to experiment with dishes I don't really appreciate much, such as jelly. I was never a huge fan of jelly desserts, but, since I had a small package of unflavored gelatine, I combined it with cassis syrup and chopped strawberries and now I regret I finished the ingredients and can't repeat the refreshing treat, perfect for hot afternoons...

The pumpking jam with brown sugar was particularly tasteful. I only didn't like much the dark brown color instead of the vibrant orange color it has when done with white sugar. Anyway, it goes well with buffalo mozzarella!

It was really fun time! I feel alive when play around with my creativity. And the perspective of having a nice bite in the end and also to sharing it with others (or I would turn into a whale before the pantry was empty!) was inspiring.

After weeks of ingredients juggling and calories shared with friends, the pantry is almost clear and the fridge will be switched off after I finish the bottle of milk... and I'll be ready to go...

... but, with new recipes to share in Terra Brasilis! :-D

CRÔNICAS DE SIGNATURE PARK - A MUDANÇA, A CRIATIVIDADE E A DESPENSA!

Se tem uma coisa que não suporto é desperdício de comida! Comida, pra mim, não é só o objeto de um dos maiores prazeres que a vida oferece, mas, antes de mais nada, o combustível que nos mantém vivos. É uma dádiva que milhões de pessoas não tem acesso e que estatísticas de programas humanitários mostram como principal razão de mortes em países pobres. Então, acho que todos devem se sentir agradecidos por ter a geladeira cheia e evitar o desperdício.

Como já contei antes, aprendi, desde pequena, com a minha mãe, que é possível o reaproveitamento de sobras e ingredientes - lembra do "dilema do pudim de pão"? - e eu realmente ponho isso em prática!

Estou me mudando de um apartamento que morei por um ano e vou ficar num hotel, por duas semanas,  então, não vou poder levar comigo o que tiver na geladeira. Tenho usado todos os truques que conheço pra combinar ingredientes e 'adaptar' receitas pra usá-los. Graças também a cadernos e livros de receitas e à gloriosa internet...

Nessa operação, acabei criando inusitados sanduíches, pizzas, wraps, saladas, patês, molhos, sopas, bolos, biscoitos etc... a grande maioria, "comível"! :-)

O meu famoso bolo de laranja foi transformado em bolo de tangerina e até em bolo de grapefruit! Esse último não foi a melhor das minhas criações, mas, os cookies the aveia que viraram cookies de farelo de trigo, estavam deliciosos!

Até tive a chance de experimentar com pratos que nem gosto muito, como gelatina. Nunca fui fã de gelatina, mas, já que eu tinha uma caixinha de gelatina sem sabor, misturei com licor de cassis e morangos picadinhos e agora lamento que acabou tudo e não vai dar pra repetir a receita, perfeita pra uma tarde quente de verão...

O doce de abóbora com açúcar mascavo ficou bem gostoso. Só não amei a cor marrom escuro em vez daquela cor laranja vibrante que tem quando feito com açúcar branco. De qualquer maneira, foi bem com mussarela de búfala!

Me diverti bastante! Me sinto viva quando posso brincar com a minha criatividade. E a perspectiva de comer algo gostoso no final e ainda dividir com outras pessoas (senão eu iria virar uma baleia antes de limpar com a despensa!) foi inspiradora.

Depois de semanas de malabarismos com ingredientes e calorias divididas com os amigos, a despensa está quase vazia e a geladeira será desligada assim que o leite acabar... daí, estarei pronta para partir...

... mas, com novas receitas pra dividir na Terra Brasilis! :-D

Bread pudding and the dilemma...

Last Saturday, I was buying the groceries for the week and the ingredients needed for lunch on Sunday. I wanted to make eggplant lasagna and bread pudding with ice cream, for dessert. Already had taken everything that was on my list (who knows me well, knows I do lists for everything!) and the cart was already giving me signs that it would be painful to carry the bag to the bus stop!, except the bread for the bread pudding! I went to the bakery, and to my surprise, I bought no bread and in a blink of an eye I changed my mind and decided to make a completely different dessert! On the way to the cashier, I was thinking about some habits that I have, related to food ...
... take a seat, here comes the story ...
You know those things that we learn from very young age and that, like a curse ... hmmm ... let's say tradition stays rooted in our brain, in our blood, in our DNA? Things like not to point a star because you will grow a wart - which is only superstition, but I challenge anyone not to think about it the next time that, for some reason, point The Three Marys or the Southern Cross - or to use Minancora cream to heal pimples even though today, there are hundreds of modern products with vitamins and moisturizer for that purpose!
Well, one of these "foibles" is to never throw food away. My mother always did everything to avoid wastage, at the kitchen. And because of this policy, there were some delicacies that we could only appreciate when there were leftovers or something about to spoil. The example here is the bread pudding, one of my favorite desserts. My mother use to make bread pudding only when we had some hard loaves, aged, from a few days ago. And so that's why I grew up with the idea that bread pudding MUST only be done with old bread. So, how to buy fresh bread just to make the pudding? "Oh, that'd be a waste!". So I left the supermarket without buying bread and decided to make rocky road (that's another story...) instead. If there is leftover bread next week, I'll make it! :-)

Pudim de pão e o dilema...

No último sábado, estava eu no supermercado fazendo a compra da semana e dos ingredientes necessários pro almoço de domingo: lazanha de berinjela e pudim de pão com sorvete, pra sobremesa. Já havia pegado tudo que estava na minha lista (quem me conhece bem sabe que eu faço "listinha" pra tudo!) e o carrinho já me dava sinais que seria doloroso carregar a sacola até o ponto de ônibus!, exceto o pão pro pudim de pão! Fui até a padaria do supermercado e pra minha surpresa, não comprei o pão e num piscar de olhos mudei de idéia e decidi fazer algo completamente diferente pra sobremesa! No caminho até o caixa, pensava comigo mesma sobre alguns princípios (ou manias) que tenho relacionados à comida...

... senta que lá vem história...

Sabe aquelas coisas que a gente aprende de criancinha e que, como se fosse uma maldição... hummm... como tradição, fica meio que enraizado no cérebro, no sangue, no DNA? Coisas como não apontar estrela porque faz crescer uma verruga - o que é pura superstição, mas, desafio alguém a não pensar nisso na próxima vez que, por algum motivo, apontar pras Três Marias ou pro Cruzeiro do Sul - ou usar Minancora pra curar espinha mesmo que, hoje em dia, haja centenas de produtos modernos com vitaminas e hidratante, para esse fim!

Bom, uma dessas manias é a de nunca jogar comida fora. Minha mãe sempre aproveitou tudo que era possível lá em casa, pra evitar desperdício. E, por conta dessa política, havia algumas comidinhas deliciosas que só davam o ar-da-graça quando tinha resto de ontem ou algo prestes a ser jogado fora. O exemplo em questão é o pudim de pão, uma das minhas sobremesas favoritas. Minha mãe só fazia pudim de pão quando tinha alguns filõezinhos duros, de uns dias atrás. E assim é que cresci com a idéia de que pudim de pão TEM QUE ser feito somente com pão velho. Então, como comprar pão fresquinho só pra fazer o tal do pudim? "Ah, que judiação!". Por isso, saí do supermercado sem comprar pão e decidi fazer rocky road (essa é uma outra história) em vez do pudim. Se sobrar pão na semana que vem, eu faço! :-)
