Intolerância ao glúten / Gluten intolerance



O homem, de ambos os sexos, é um ser intolerante por natureza. A história da humanidade está cheia de fatos relacionados à intolerância: guerras, conflitos, golpes, genocídios, debates etc. É difícil ter aceitação geral em tudo. Mas, o contrário também é verdade: muita gente simplesmente segue o gosto da maioria sem, às vezes, ter conhecimento sobre o assunto em questão.

Intolerância é, na verdade, produto da ignorância. E tem muita gente intolerante ao glúten por simples falta de conhecimento sobre esse nutriente.

Glúten é uma combinação de duas proteínas que se encontra em alguns cereais (trigo, cevada e centeio). Proteína é um nutriente necessário à manutenção e formação de novas células, portanto, primordial na alimentação humana.
-Nota: aveia NÃO contém glúten naturalmente, mas, pode ser contaminada com glúten durante o processamento se usado mesmo maquinário que trigo, cevada ou centeio foram processados. Há ainda o fato de que a proteína natural presente na aveia, muitas vezes, também causa mal estar em celíacos - pessoas alérgicas ao glúten.

A maior parte da proteína consumida pelos seres humanos vem dos alimentos de origem animal: carnes, ovos e lácteos. Mas, uma boa porção vem dos alimentos de origem vegetal, o que é excelente notícia para os vegetarianos. Quem, por alguma razão, não come carnes - incluindo frango, peixes e frutos do mar -, tem que se valer de todas as outras fontes de proteína disponíveis.
Nos últimos anos, pessoas e mais pessoas, no mundo todo, vêm banindo de sua dieta alimentos que contenham glúten por razões diversas. Há quem diga que glúten engorda, que glúten é veneno... uma pesquisa rápida na internet vai mostrar os mais diversos absurdos como "resposta". Alguns são ridiculamente engraçados até! O fato é que há tanta (des)informação na internet, nos programas de tv, que acaba confundindo todo mundo.

Eu gerencio a cozinha de uma escola que prepara três refeições diárias para mais ou menos 130 pessoas e escuto as mais bizarras afirmações sobre como o glúten tem que ser erradicado da face da terra porque faz mal ao ser humano! Não sei como o cidadão conseguiu desenvolver tamanha intolerância a um nutriente inofensivo e valioso! 

Pra formar minha opinião e pra responder à afirmações duvidosas, sempre me valho de fontes em que confio para obter informação e gostaria de sugerir que você faça o mesmo. Portanto, se quiser mais informação sobre o que é glúten e porque ele pode ser perigoso pra algumas pessoas, assista a esse vídeo feito pelo Dr. Dráuzio Varella para o Fantástico: Doença celíaca. Outra fonte confiável de informação é o site do Ministério da Saúde. Este é o link que leva à página com informação sobre a doença celíaca na Biblioteca Virtual em Saúde.

Meu apelo é para aqueles que não são celíacos: chega de intolerância ao glúten!! Vamos comer pãozinho, pizza, bolacha, macarrão, com moderação, e nos beneficiar dessa proteína e dos demais nutrientes presentes nos cereais que são tão importantes para nossa saúde! :-)

The man of both sexes is an intolerant being by nature. The history of mankind is full of facts related to intolerance: wars, conflicts, genocides, debates etc. It is difficult to have general acceptance of everything. But the opposite is also true: many people simply follow the ideas of the majority without sometimes having knowledge of what the thing is about.

Intolerance is actually the product of ignorance. And there are many people intolerant to gluten by simple lack of knowledge about this particular nutrient.

Gluten is a combination of two proteins that is found in some cereals (wheat, barley and rye). Protein is necessary for the maintenance and formation of new cells, therefore, an essential nutrient in the human diet.
-Note: Oats DO NOT contain gluten naturally, but can be contaminated with gluten during processing when the machinery used is the same as wheat, barley or rye were processed. There is also the fact that the natural protein present in oats often also causes discomfort in celiacs - people who are allergic to gluten.

Most of the protein consumed by humans comes from foods of animal origin: meat, eggs and dairy. But a good portion comes from foods of plant origin, which is great news to vegetarians. Who, for some reason, doesn't eat meat - including chicken, fish and seafood - have to rely on all other sources of protein available.  
In recent years, people and more people, worldwide, have banished from their diet foods containing gluten for different reasons. Some say that gluten is fattening, others say that gluten is poisonous ... a quick search on the internet will show the various absurd "answers". Some are even ridiculously funny! The fact is that there is so much (mis)information on the internet and on tv shows that it adds up to the confusion around gluten.

I manage the kitchen of a school that prepares three meals for about 130 people daily and I hear the most bizarre claims about gluten: that it has to be eradicated from the face of the earth because it is bad for humans! I don't know how the person could develop so much intolerance to such a harmless and valuable nutrient!

Jimmy Kimmel Live show went to the streets of Los Angeles and made this hilarious video asking "What's gluten?". The right answer here.
To make up my mind and to respond to dubious assertions, I always rely on sources I trust for information and would suggest you to do the same. So if you want more information about what gluten is and why it can be dangerous to certain people, check what Dr. Rosemary Stanton has to say about it. Also have a look at this article published last year with information from renown doctors and nutritionists on the likely reason the 'gluten-free diet' fad had spread around Sydney.

My appeal is for those who are not celiac: stop gluten intolerance!! Let's eat bagel, pizza, biscuits, pasta, in moderation, and benefit from this protein and other nutrients found in cereals that are so important to our health! :-)

Realização de um sonho escondido.../ A hidden dream coming true...

Nas últimas semanas, me descobri feliz por estar desempenhando uma função em que nunca havia me imaginado: radialista!

Faço um trabalho voluntário pra uma escola de meditação local há mais de dois anos e, recentemente, fui presenteada com uma nova função que é apresentar o programa de rádio que eles têm aos domingos de manhã.

O nome do programa é Mind Matters (algo que eu traduzo como Papo Cabeça, mas a tradução livre é Assuntos da Mente) e o foco é a técnica vipassana de meditação. Além de música legal (que eu mesma escolho e só toco música que eu gosto!), também tem entrevistas e palestras, previsão do tempo, notícias e situação das rodovias e linhas de trem locais, e mais os meus comentários, é claro.

Eu preparo o show com esmero: escolho um tema, daí, vou atrás de material relacionado com o tema (ex.: o que significa vipassana, valor do trabalho voluntário, equilíbrio da mente, falta de amor no mundo etc). É muito legal entrevistar pessoas e aprender um pouco mais sobre elas. Ando aprendendo bastante sobre meditação já que tenho estudado bastante para montar os roteiros.

Outra coisa muito legal é que estou aprendendo muito sobre equipamentos de som, edição de arquivos de som e aprendendo todos os 'jargões' que radialistas experientes usam.

Mas, a melhor parte é definir a trilha sonora! Havia esquecido de como gosto de música já que não tenho tido muita chance de ouvir música, nos últimos tempos. Mas, agora, estou montando um banco de dados que (na minha opinião!) é de dar inveja em profissionais da área! Ouço música o dia todo pra ir catalogando e selecionando as que incluirei em futuros programas. Ah, estou adorando isso tudo!

In the past weeks, I found myself happy to be playing a role in which I had never imagined: radio broadcaster!

I do volunteer work for a meditation school for over two years and recently I was given a new function that is to present the radio show they have on Sunday mornings.

The program name is Mind Matters and the focus is on vipassana meditation technique. In addition to cool music (I choose the soundtrack myself and just play songs I like!), it also has interviews and talks, weather, news and situation of local highways and train lines, plus my comments, of course.

I prepare the show with care: choose a theme, then, I look for material related to the topic (e.g.: meaning of vipassana, value of voluntary work, balance of the mind, lack of love in the world etc). It's really cool to interview people and learn a little more about them. I've been learning a lot about meditation since I have to research a lot to develop the scripts.

Another really cool thing is that I'm learning a lot about sound equipment, editing sound files and learning all the 'jargon' that experienced broadcasters use.

But the best part is setting the soundtrack! I had forgotten how much I like music since I haven't had much chance to listen to music in recent times. But now I am building a database that is worthy of envy (or I wish!) to professionals! I listen to music all day to catalog and select those that I will include in future programs. Ah, I'm loving it all!

Lamington

Lamington é um bolo tradicional na Austrália e leva o nome de um governador australiano do século 19. Simples pão de ló, recheado com geléia, tradicionalmente de morango, e coberto com chocolate e coco ralado.

Hoje é Dia da Austrália, 26 de janeiro, e, pra comemorar, fiz a minha versão de Lamington:

LAMINGTON CUPCAKES

180g de manteiga sem sal
1 1/4 copo de açúcar refinado
3 ovos
1/2 colher de chá de essência de baunilha
1 1/2 copo de farinha de trigo
1/2 colher de chá de fermento químico
1/2 copo de leite

Bater na batedeira a manteiga e o açúcar até ficar cremoso. Adicionar os ovos e a baunilha e bater mais um pouco. Adicionar a farinha e o fermento em pó e o leite, aos poucos.
Colocar em forminhas de cupcake e assar por uns 20-25 minutos em forno médio (180°C). Deixar esfriar.

Cobertura
1 colher de sopa de cacau em pó
1 colher de sopa de manteiga sem sal
1/2 copo de água fervente
3 copos de açúcar de confeiteiro
geléia da sua preferência
coco ralado

Derreter a manteiga na água fervente e adicionar o cacau em pó. Mexer com um garfo até ficar homogêneo. Adicionar o açúcar de confeiteiro aos poucos, até a consistência desejada - eu gosto bem firme.

Quando os bolinhos estiverem frios, cortar ou raspar com uma colher o topo e fazer um buraco raso. Preencher o buraco com geléia e cobrir tudo com a cobertura de chocolate - eu usei o saco de confeitar, mas pode-se usar simplesmente uma colher. Salpicar o coco ralado por cima de tudo.

Eu usei geléia de tangerina que era o que eu tinha na despensa - presente do meu vizinho!

Lamington is a traditional cake in Australia and takes the name of an Australian Governor from the 19th Century. It is a simple sponge cake, filled with jam, traditionally strawberry jam, and topped with chocolate and shredded coconut.

Today is Australia Day, January 26, and to celebrate, I made my version of Lamington:


LAMINGTON CUPCAKES


180g unsalted butter
1 1/4 cup caster sugar 
3 eggs
1/2 teaspoon vanilla extract
1 1/2 cup all-purpose flour 
1/2 teaspoon baking powder
1/2 cup milk 
Mix the butter and sugar until creamy. Add eggs and vanilla and beat a little more. Add the flour and baking powder and milk gradually.Put into cupcake pans and bake for 20-25 minutes in a moderate oven (180°C). Allow it to cool.

Icing

1 tablespoon cocoa powder 
1 tablespoon unsalted butter 
1/2 cup boiling water
3 cups icing sugar
jam of your choice
shredded coconut
Melt butter in boiling water and add the cocoa powder. Whisk until smooth. Add the icing sugar gradually until desired consistency - I like it thick.

When the cupcakes are cool, cut or scrape the tops with a spoon and make a shallow well. Fill the well with jam and cover it with chocolate icing - I used a piping bag, but you can just use a spoon. Sprinkle shredded coconut on top.


I used tangerine jam as it was what I had in the pantry - a gift from my neighbour!
