Minha versão de pão de mel / My version of the Brazilian gingerbread

Quem não gosta de pão de mel? Bolo com especiarias, recheado com doce-de-leite e coberto com chocolate! Não tem como não gostar!! Pois é, os australianos apresentados à essa delícia, também se renderam aos seus encantos. Meu marido foi o primeiro.

Hoje, 1 de setembro, é aniversário dele (e primeiro dia oficial da primavera australiana!), mas, comemoramos ontem com um bolo que arrancou suspiros e gemidos de toda família! hehe
Quando tirei o 'bolo' da caixa e coloquei em cima da mesa, todos arregalaram os olhos me perguntando 'o que era aquilo'! E, chegando mais perto, dava pra sentir o cheiro de chocolate, deixando óbvio que era o bolo de aniverário do Malcolm. Daí, a pergunta era 'como você fez isso?'. 'Mágica!' hehehe

É simplesmente pão de mel, recheado com doce-de-leite e coberto com chocolate amargo.

'E as velas, também são de comer?'... 'Não, só os copinhos são de comer, as velas são só pra soprar e descartar...' hehehe

Foi bem divertido fazer o bolo e melhor ainda comê-lo! Mas, nada como ver o povo curioso e satisfeito! Não sobraram nem os copinhos... e vi gente lambendo as velinhas também... hahaha! :-)

Who doesn't like gingerbread (Brazilian version)? Cake with spices, stuffed with milk caramel and coated with chocolate! Impossible not to like it!! Australians introduced to this delight, also surrendered to its charms. My husband was the first one.

Today, September 1, is his birthday (and official first day of the Australian spring!), but we celebrated yesterday with a cake that took the whole family's breath away! hehe

When I took the 'cake' out of the box and put it on the table, all looked at it with wide eyes wondering 'what that was'! As they got closer, they could smell the chocolate, making it obvious that it was Malcolm's birthday cake. Then, the question was 'how did you do that?'. 'Magic!' hehehe

It is simply gingerbread, stuffed with milk caramel and coated with dark chocolate.

'What about the candles, are they also edible?' ... 'Nope, just the cups are, the candles are just for blowing and discarding ...' hehehe

It was fun making the cake and eating it even better! But nothing like watching everybody, puzzled and happy! Not even the cups were left... and I saw people licking the candles too ... hahaha! :-)

Alfarroba / Carob

Conhecido também como substituto de chocolate. Sabia? Alfarroba é o fruto da alfarrobeira, árvode nativa da região do Mar Mediterrâneo e tem características semelhantes às do cacau.

Na forma de pó, podem ser usados praticamente da mesma forma, apesar de a alfarroba ser mais doce que o cacau. Outra vantagem da alfarroba é que não contém cafeína e é menos gordurosa que o cacau. Também é rica em proteína, minerais e vitaminas.

Eu já conhecida a goma de alfarroba, usada na indústria alimentícia como emulsificante e espessante, mas, como ingrediente culinário, somente fui apresentada recentemente e me apaixonei. Não acho que seja um substituto do cacau em termos de sabor, mas, com certeza pode ser usada em praticamente todas as receitas que levam cacau ou chocolate.  Por exemplo, alfarroba quente (= chocolate quente) nem precisa de açúcar ou adoçante, e até brigadeiro fica uma delícia com alfarroba no lugar do chocolate!

Se quiser tentar, pegue a sua receita de brigadeiro e substitua o chocolate em pó pela alfarroba em pó. Eu usei:

1 lata de leite condensado
3 colheres de alfarroba em pó
1 colher de sopa de manteiga

Cozinhei até desgrudar do fundo, esperei esfriar, enrolei e cobri com chocolate granulado.

Fica uma delícia! A aparência é exatamente igual ao doce feito com chocolate, mas não espere exatamente o mesmo sabor. Na minha opinião, a impressão que dá é de que foi adoçado com açúcar mascavo.

Pena que a alfarroba não seja tão popular e não acredito ser fácil de encontrar em supermercados, mas, mais provavelmente, em lojas de produtos orgânicos e integrais.

De qualquer maneira, é mais uma opção pra quem quer, por alguma razão, fugir do cacau ou simplesmente ter mais um ingrediente para investigações culinárias! ;-)

Known also as a substitute for chocolate. Did you know it? Carob is the fruit of the carob tree, native from the Mediterranean region and has similar characteristics to the cocoa.
In powder form, they can be used much the same way, although the carob is sweeter than cocoa. Another advantage of the carob is that it's caffeine free and contains less fat than cocoa. It is also rich in protein, minerals and vitamins.

I've used locust bean gum before (another product from carob tree), used in the food industry as emulsifier and thickener, but as a culinary ingredient, I was introduced only recently and fell in love with it. I don't think it is a substitute for cocoa in terms of taste, but certainly can be used in virtually all recipes with cocoa or chocolate. For example, hot carob (= hot chocolate) needs no sugar or sweetener, and even brigadeiro (a Brazilian sweet delicacy) is great with carob replacing chocolate!

If you want to give it a try, take your brigadeiro recipe and replace chocolate powder for carob powder. Here's mine:

1 can sweetened condensed milk
3 tablespoons of carob powder
1 tablespoon butter

I cooked all ingredients, stirring all the way until it thickened to the point it didn't stick on the bottom of the pan anymore, let it to cool, rolled it into balls and coated them with chocolate sprinkles.
Yummy! The appearance is exactly like the sweet made with chocolate, but do not expect exactly the same flavor. In my opinion, it tastes like it was sweetened with brown sugar.

Pity that carob is not that popular so that you can find it in supermarkets, but more likely in stores of organic products.

Anyway, it's an option for those who want, for some reason, stay away from cocoa or simply would like to have one more ingredient for culinary research! ;-)
